Tuna & White Bean Salad (Ensalada de Judias Blanca).
Ingredients
• 1 x 400g jar white kidney beans , drained and rinsed
• 1 red onion , finely chopped
• 1 red pepper
• 2 garlic cloves , crushed
• 1 juice of 1 lemon
• 150ml virgin olive oil
• 250g cherry tomatoes on the vine
• 1 can of Tuna

Mix together the beans, onion, garlic, tuna, red pepper and lemon juice. Dress with some olive oil and seasoning, then leave to stand for half an hour or more. Preheat the oven to fan 200C/conventional 220C/gas 7. Lay the tomatoes on a baking sheet, drizzle with olive oil and season, then roast for 6-8 minutes until the skins have blistered and started to split.
Put the tomatoes on top of the salad, then spoon over any remaining dressing and the tomato roasting juices.
