Garlic Rabbit Cordoba style. As the name indicates, this dish is typical from the province of Córdoba. It is quite easy to prepare but it requires some preparation in advance as the recipe requires marinating.
Ingredients for 4 people:

1 kg of skinned rabbit
salt
thyme
rosemary
black or white pepper
olive oil
8 garlic cloves
1 glass Moriles wine (Fino)

Method:

Add salt and pepper to the rabbit and marinate in the Moriles wine, rosemary and thyme for 6-10 hours.
With a tea towel dry the rabbit. Heat a frying pan with the olive oil and all the garlic cloves until the garlic is golden. Add the rabbit until is brown. Remove excess of olive oil and add the liquid from the marinating. Leave it to cook for another 20 minutes.
Serve with green beans or a salad.

Tip: If you don’t like dry wine, Moriles wine can be a little bit too dry. Try adding less quantity or experiment with a medium or sweeter wine for a different taste.
